You Made a Quiche outa What?

Yep, that’s right; I made a quiche out of rutabaga. Been doing it for years, and it couldn’t be simpler.

The ingredients are as follows:

One rutabaga – one green pepper – one Vidalia Onion – fresh dill – salt – black pepper – lemon juice – butter (I use Smart Balance) – eggs.

The process:

Skin your rutabaga, cut into tiny cubes (as small as possible), and steam until soft. Meanwhile, place finely chopped onion and pepper in a skillet and sauté with butter, layering in your salt, black pepper, and fresh dill. When ready, mix rutabaga with butter, salt, and pepper, and combine with sautéed onion and pepper in a baking dish. Beat 6 to 8 eggs (the number of eggs will depend on the size of your rutabaga), add three tablespoons of lemon juice, and pour into a baking dish. Bake at 400 degrees until eggs solidify and then few additional minutes under the broiler to brown the top. An option, although it will provide a calorie boost, would be to bast the top with butter and sprinkle on some cheese before broiling. Bon Appetit!
